Ingredients:
- 2 cups almond flour
- 1/2 cup of dried organic apricots
- 1/2 cup dried dates
- 1/2 cup dried figs
- 1/2 cup raisins
- 1/2 cup prunes
- 1 orange (zest & juice)
- 3 tablespoons coconut oil
- 3 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon of cinnamon
- 1/2 teaspoon nutmeg
- pinch of salt
- 1/2 cup of nuts of choice
Instructions:
- Preheat oven to 375° F.
- Slice all the dried fruit and mix together in a bowl. Grate the orange zest and add to the bowl along with the juice.
- In another bowl, mix the eggs, oil, vanilla, spices, and salt, and whisk mix in the dried fruits, and fold it gently into the mixture. Add the nuts.
- Empty the mixture into a greased loaf pan and bake for 60 minutes.
